Still trying to keep cool here in the pit of hell. I was complaining about the heat yesterday - we hit a record, didn't actually break it, but tied at 114 - but the rest of this week is going to be worse and worse, if the weather report is accurate. Heh, I actually heard one newscaster say something like "cooling trend coming next week" by which he meant the temperatures may drop down as low as 109.
Lord, how will I survive? I'll have to get out my wooly parka!
ANYway, I have this box of peach tea bags that mom left here that I've been enjoying and grocery store fodder or not, it's still VERY tasty. I've mentioned peach tea over ice before, but this time I went a step further. I made tea-sicles. I had planned to just suck these to stave off the heat, but I needed something tea-ish and fruity (and COLD) last night so I added them to some apricot juice.
The combination of peach tea and apricot was ... transportive. I was in some lush, cool jungle filled with flowers. Lying in the grass under a tree in a densely shaded grove of fruit trees, surrounded by the smells and sounds of a lazy summer.
*sigh* I know, waxing rhapsodic again. Now, the actual recipe, which I will henceforth call my own (even though it's not entirely original) ...
Apricot Peachtea Delight
Peach flavored tea, steeped very strong.
Honey, if desired
Let it cool for a bit
Pour into an ice tray
If planning to eat like popsicles, insert a small toothpick or appetizer forks into each and place in freezer.
Add 5-6 tea cubes to 8 oz (more or less) chilled apricot juice.
Add a sprig of fresh mint to the glass (I would have if I'd had any...)
The tea-sicles were so good I had some for breakfast. Today I'm going to try adding a little fruit juice to the ice cube tray as well.

I think that is a refreshing idea; you could use any type of tea (green tea, etc.) and have a healthy, refreshing treat!
