This is an easy recipe that I love to serve for afternoon tea. It makes 4 dozen small cookies, so what I usually do is make 4 flavors, a dozen of each. My nieces loved to help make these in different shapes, though they sometimes got carried away with the sugar on top.
Ingredients:
2 cups flour
1/4 tsp salt
1 cup butter
1 - 8 oz. package cream cheese
1-2 eggs, beaten
Jam (different flavors)
cookie cutter shapes
Sift flour and salt. Cut in butter and cream cheese. Shape into a ball and refrigerate. When chilled, roll dough out to about 1/8" thickness. Cut shapes, two of each, for top and bottom of the cookies. Place bottom on lightly greased cookie sheet. Spoon a dollop of jam into the center of each. Brush edges with beaten egg. Place "top" onto each, and crimp the edges down with a fork. Brush tops with beaten egg and sprinkle lightly with sugar. Bake 10-12 minutes @ 400 degrees.
You can use almost any shape cookie cutter, as long as there is enough room in the center for the jam. If you don't have fancy shapes, simple triangles are just fine. You can get creative with your edge crimping to dress them up, as well.
